Abstract(s)
A presente comunicação visa contribuir para o incremento da competitividade da fileira
dos queijos regionais de qualidade, em particular, de pequenos ruminantes. Para tal,
tendo por base informação publicada pelo Gabinete de Planeamento, Políticas e
Administração Geral – GPP, é realizada uma análise temporal (2003-2012) de
indicadores de produção e comercialização de queijos com Nome Protegido obtidos a
partir da cabra e da ovelha, incluindo a sua comparação com produtos similares.
Em 2012 existiam 17 queijos qualificados em Portugal, embora 6 deles sem produção.
O peso médio do queijo de ovelha certificado no total nacional foi 3,6%, tendo
aumentado ao longo do período analisado, pese embora a diminuição global de 23% do
volume de produção, reforçada por uma descida ligeira no preço médio. O diferencial
de preços entre o produto certificado e sem certificação é, em média, de 23%
(2,60€/kg), sendo o Queijo de Azeitão aquele que apresenta a maior valorização do
produto certificado (80%). O Queijo Terrincho apresenta o pior desempenho, com um
diferencial médio de apenas 11%. As médias e grandes superfícies foram o canal mais
utilizado para escoar os queijos de ovelha, sendo estes predominantemente
comercializados pelos produtores para o mercado nacional.
O Queijo de Cabra Transmontano é o único queijo certificado confecionado
exclusivamente com leite de cabra. A sua produção sofreu uma perda global de volume
de 5,6%, mitigada por um acréscimo médio anual de 2,4% no preço. Contudo, a análise
comparativa dos preços mostra que a opção pela qualificação do produto tem vindo a
perder vantagem. Este queijo é comercializado pelo agrupamento, para os mercados
local/regional e nacional, sendo as empresas transformadoras, associações de produtores
e embaladores os canais preferenciais para o escoamento.
The present study aims to contribute to improvement of the competitiveness of the segment of regional cheeses of quality, particularly, cheese made from sheep and goat's milks. Thus, by using data provided by the Office for Planning, Policies and Administration, it performs a temporal analysis (2003-2012) of indicators of production and marketing of goat and sheep cheeses with geographical indication labels and its comparison with similar products. In 2012, there were 17 Protected Name cheeses in Portugal, although six of them without production. The average weight of certified sheep cheese in the total domestic sheep cheese production was of 3.6%, having increased over the study’s period, despite the overall decrease of 23% of the production volume, enhanced by a slight decline in average prices. The price differential between the certified and uncertified product is on average of 23% (2.60€/ kg). The Azeitão cheese shows the best performance regarding the ability to exploit the advantages of certification (it presents a difference between its price and similar products price of 80%, on average). Contrary, the Terrincho cheese shows the poorest performance (an average differential of only 11%). Medium and large-sized grocery stores are the most used channel to distribute the certified sheep cheeses, which are predominantly marketed by producers for the domestic market. The cheese goat Queijo de Cabra Transmontano is the only certified cheese made exclusively with goat milk. Its production suffered an overall loss of 5.6% in volume, mitigated by an annual average increase of 2.4% in price. However, the comparative analysis of prices indicates that this product's certification has been losing advantage. This cheese is marketed entirely by producers’ association, for local/regional and national markets. Processing enterprises, producers’ associations and packers are the preferential distribution channels.
