Abstract(s)
São resumidas uma série de refexões sobre a história e evolução do
uso de marcas desde as antigas civilizações da Etrúria, Grécia e Roma até
aos nossos dias. Os aspectos mais relevantes da evolução das marcas de
qualidade de carne e produtos cárneos são analisados numa perspectiva
histórica e cronológica, desde o inicio da prática de branding usada pelos
antigos egípcios (2.700 a.C.) que eram conhecidos pela prática de criação de
gado. Com o crescimento e transformação da economia a partir de 1500, as
mudanças na estrutura da sociedade tiveram consequências na indústria da
carne e de todo o tipo de comércio. As evoluções signifcativas na fleira da
carne, iniciadas no séc. XVII continuaram até fnais do séc. XIX. O advento da
revolução industrial, levou à necessidade de um melhor abastecimento dos
mercados, e ao aparecimento das primeiras marcas de qualidade de carne. A
globalização do consumo originou o aumento da procura de qualidade por
parte dos consumidores, exigindo maior efciência na forma de produção,
transformação e comercialização. Finalmente são apresentadas algumas
prospectivas e tendências da evolução das marcas de qualidade de carne.
A series of reflections on the history and evolution of the use of trademarks from the ancient civilizations of Etruria, Greece and Rome to the present day are summarized. The most relevant aspects of the evolution of the quality marks of meat and meat products are analysed in a historical and chronological perspective, from the beginning of the branding practice used by the ancient Egyptians (2,700 BC) who were known for the practice of cattle raising. With the growth and transformation of the economy since 1500, changes in the structure of society have had consequences in the meat industry and in all kinds of trade. Significant developments in the meat industry, initiated in the 17th century, have continued until the end of the 19th century. The advent of the industrial revolution led to the need for better supply of markets and the appearance of the first brands of meat quality. The globalization of consumption has led to increased demand for quality by consumers, requiring greater efficiency in the form of production, processing and marketing. Finally, some prospects and trends of meat quality brands evolution are presented.
