Abstract(s)
This research aimed to identify physical and organoleptic characteristics that promote
honey consumption. A cross-sectional study was carried out, based on a non-probabilistic
sample of 474 individuals. A binary logistic regression model was estimated for a
significance level of 1%. The taste, color, origin and certification seal were identified as
promoters of honey consumption. These characteristics explained 68.9% of honey
consumption. Therefore, it is concluded that honey is a product to which the consumer
recognize authenticity and innate attributes.
