| dc.description.abstract | Se presenta un atlas para la disección de la canal de los rumiantes. El atlas se estructura en cuatro partes. En la primera parte se describe cómo preparar la canal de los pequeños rumiantes para su disección, la obtención de las diferentes piezas y la disección detallada de cada una de ellas. En la segunda parte se muestra cómo realizar la disección de una costilla de vacuno. En la tercera, se ofrecen los valores esperables para la composición de cada pieza, así como las fórmulas para calcular el porcentaje de cada tejido en la canal o la pieza. | dc.description.abstract | The aim of the present paper is to show an atlas to correctly make the dissection of ruminant’s carcass. The atlas is structured into four parts. In the first part is described how to prepare the carcass of small ruminants for the dissection, the way to obtain the different joints and the detailed dissection of each one of them. In the second part is shown the way to make the dissection of a bovine rib. The third part offers expected values for each joint, as well as the formula to calculate the percentage of each tissue respect to the carcass or to the respective joint. Finally, the fourth part is a bibliographic recompilation prepared in order that the researchers can to check its own data. | por |
