Abstract(s)
A implementação de Sistemas de Gestão da Segurança Alimentar é um
procedimento indispensável nas indústrias alimentares para garantir a produção de
alimentos seguros e adequados ao consumo. Estes sistemas permitem igualmente
responder às exigências das cadeias de distribuição, levam ao aumento de produtividade
e competitividade das empresas e aumentam a confiança do consumidor.
O presente relatório de estágio visa documentar o trabalho de implementação de
um Sistema de Gestão da Segurança Alimentar com base no referencial de certificação
NP EN ISO 22000:2005 numa Adega em Espanha. O trabalho foi desenvolvido no âmbito
de um relatório de estágio e teve como objetivo final a certificação da empresa.
Com a implementação da NP EN ISO 22000:2005, na adega em estudo, para além
de inúmeras vantagens, espera-se um reforço do reconhecimento internacional, face a
outras normas, pelo facto de ser uma norma ISO.
The implementation of Management Systems and Food Security is an indispensable procedure in the food industry to ensure the production of safe and suitable aliments for consumption. These systems also able to meet the requirements of supply chains, leading to increased productivity and competitiveness and increase consumer confidence. This thesis aims the implementation of a Management System and Food Security based on benchmark certification NP EN ISO 22000:2005 in a Winery located in Spain. The work was developed in the context of a professional training program and had the ultimate goal of the companie certification. With the implementation of NP EN ISO 22000:2005, for the cellar wines under study, in addition to numerous advantages, it is expected a strengthening of international recognition, compared to other standards, because it is an ISO standard.
