Santos, Nayra Caldas dos; Barreiro, M.F.; Santamaria-Echart, Arantzazu; Watanabe, Erica Roberta Lovo da RochaThere is great difficulty in incorporating hydrophobic compounds in hydrophilic-based films, so new incorporation routes are increasingly sought, can be applied in the food industry. The present work aims to approach this challenge through new strategies, in this case, to produce a biofilm incorporating Pickering emulsions that contain curcumin. The polymer of the particles that stabilize the emulsion and the biopolymer that compose the film will be the same, in this case, the cellulose. The Pickering emulsion will be an emulsion oil in water (O/W), and the great difficulty is to find a stable formulation. For that, a Design of experiments (DoE) was used to inspect how the variables behaved in the process, and so it was seeking the optimization until the stable final formulation. The use of the high-pressure homogenizer was essential. It was used in the process of dispersion of the cellulose and in the preparation of the emulsion to reduce the droplets in the search for stability. The films were produced by the casting method. A stable 10/90 O/W emulsion containing a 3% cellulose and 0.5% of curcumin was incorporated into the film-forming dispersion containing 10% of cellulose to prepare the films. The characterization of the films was conducted according to their physical-chemical properties, analyzing the coloration, the transparency through UV-Vis analysis, and physicochemical, functional groups identification by FTIR. After some difficulties during the process it was possible to reach the objective of the work.
