Sixty-two samples of Apis mellifera dehydrated bee pollen collected in Brazil (eight states and Federal District) were analyzed for phenolic compounds, flavonoids, antioxidant activity using DPPH, β-carotene and ORAC methods, and antimicrobial activity. The values obtained for total phenolic compounds ranged from 12.60 to 84.22 mg GAE/g bee pollen while total flavonoids oscillated between 1.90 and 36.85 mg quercetin/g bee pollen. The IC50 ranged from 0.35 to 13.42 mg bee pollen/mL of extract. The inhibition percentages ranged from 52.58 to 98.37% of bee pollen extract using the β-carotene method. When measured by the ORAC method, antioxidant activity was between 132.98 and 575.85 μmols eq. Trolox/g bee pollen. Bee pollen efficiently inhibited the growth of all the microorganisms studied. Candida albicans was the most resistant, while Staphylococcus epidermides was the most sensitive.
- Brazilian samples of bee samples pollen: palynological origin, phenolic content, antioxidant properties and antimicrobial activityPublication . Arruda, Vanilda Aparecida Soares de; Santos, Alexandre Vieria; Figueiredo, Davi; Meira, Sampaio; Estevinho, Leticia M.; Barth, Ortrud M.; Freitas, Alex da Silva; Almeida-Muradian, Ligia BicudoTotal phenolic and flavonoids phytochemical concentration was measured in bee pollen samples, Appis Mellifera , as well as their botanical origin, antioxidant activity and antimicrobial activity. Pollen loads were washed with 70% ethanol and identified using a 400x magnification. The content of total polyphenols and flavonoids was measured spectrophotometrically with gallic acid and quercetin as standard. The antioxidant activity was evaluated by the linking capacity of (i)the free radical DPPH (2,2-Diphenyl-1-picrylhydrazyl), (ii)ORAC and (iii)system β-carotene/linoleic acid. The experiments were performed in triplicate and the results expressed as mean ± standard deviation. All statistical analysis were performed using the program STATISTICA 8.0 and adopting the significance level of 5% (p<0.05). Were using six samples of dehydrated bee pollen collected in Ribeirao Preto, SP, Brazil during the years of 2010 and 2011. Five families were found in the mixture of bee pollen: Mimosa caesalpiniaefolia , Mimosa scabrella, Asteraceae, Poaceae, Zea mays. Each dried bee pollen sample was composed mainly of Mimosa caesalpiniaefolia (Fabaceae-Mimosoideae). The variations were (dry basis): 17.64±1.57 to 32.14±2,88 mg GAE/g of bee pollen for phenolic compounds; 2.51±0.28 to 3.71±0.25 mg quercetin/g of pollen for flavonoids concentration; 77.15±0.72 to 90.56% for antioxidant activity (DPPH) and 3.19±0.25 to 4.61±0.33 mg/mL for EC50; 183.42±16.26 to 338.32± 33.38 μmols eq. Trolox/g for ORAC and 68.96±2.75 to 85.90±2.27% for β -carotene/linoleic acid. Samples of pollen, phenolics and flavonoids have the potential biological, showing high antioxidant activity by the three methods used. It was verified that the presence of pollen differentially affected the growth of bacteria Gram-positive, Gram-negative and yeasts under study, depending this on the microorganism and the pollen used in fact, only one after sample was monofloral Mimosa caesalpiniaefolia. This is an important study since; their characterization can increase their economic value. - Microbiological quality and physicochemical characterization of Brazilian bee pollenPublication . Sixty-two commercial samples of dehydrated bee pollen (Apis mellifera bees) collected in Brazil (eight states and the Federal District) were analyzed for commercial quality (moisture, ash, lipids, proteins, and carbohydrates), and hygiene (aerobic mesophiles, yeasts and molds, coliforms, Escherichia coli, Staphylococcus aureus and sulfite-reducing Clostridium). The analyzed samples were within the regulatory limits established by the legislation for ash, lipid and protein, except for moisture content. The analyzed hygiene parameters evaluated for bee pollen are not regulated by the Brazilian legislation, and the data discussed can contribute to regulatory agencies. Only moderate and weak correlations were observed between dehydrated pollen samples and the parameters evaluated.

- Presence and stability of B complex vitamins in bee pollen using different storage conditionsPublication . Arruda, Vanilda Aparecida Soares de; Pereira, Aline Aparecida Santos; Estevinho, Leticia M.; Almeida-Muradian, Ligia BicudoThis study has the objective of evaluating the stability of B complex vitamins and its vitamers, for a period of 1 year of storage. The pollen samples were stored under room temperature (with and without light) and frozen. The vitamins were quantified by HPLC with fluorescence detection. All proposed vitamins were found in the samples and the dehydration process did not interfere in vitamin content. The variations were (dry basis): 0.59–1.09 mg/100 g (B1); 1.73–2.56 (B2); 6.43–15.34 (PP) and 0.33–0.68 (B6). After 1 year of storage, it can be stated that vitamin B1 concentration remained constant, while for the others, the concentration loss was dependent on time rather than on storage conditions. All samples were considered vitamin B2 sources. The influence of the storage time in the concentrations of vitamin B6 and PP was explained mathematically, through linear regression equations of multivariate analysis.

As substâncias antioxidantes (compostos bioativos) quando presentes na dieta em quantidades significativas e contribuem para prevenção de doenças graves, tais como: câncer, cardiopatias, distúrbios metabólicos, doenças neurodegenerativas e enfermidades.
- Propriedades biológicas do pólen apícola de coqueiro, coletado na Região Nordeste do BrasilPublication . Arruda, Vanilda Aparecida Soares de; Freitas, Alex da Silva; Barth, Ortrud M.; Estevinho, Leticia M.; Almeida-Muradian, Ligia BicudoO pólen apícola, com vastas aplicações na alimentação humana, resulta da aglutinação de grãos de pólen de várias fontes vegetais efetuada pelas abelhas, mediante acréscimo de substâncias salivares e pequenas quantidades de néctar ou mel. O presente trabalho objetivou avaliar o conteúdo de compostos fenólicos, flavonoides totais e o potencial antioxidante dos extratos etanólicos de pólen apícola desidratado, assim como sua atividade antimicrobiana. Todas as amostras, coletadas na região nordeste, apresentaram mais de 45 % do pólen de coqueiro (Cocus nucifera). Os valores obtidos para compostos fenólicos e flavonoides totais variaram de 13,76 a 24,60 mg GAE/g de pólen apícola (GAE: equivalentes em ácido gálico) e 2,52 a 6,90 mg de quercetina/g de pólen apícola respectivamente. O EC50 variou de 1,30 a 8,08 mg pólen apícola /mL de extrato. Os extratos de pólen apícola apresentaram valores entre 61,63 e 83,90 % utilizando-se o método do β-caroteno. Quando quantificada por ORAC, a atividade antioxidante medida ficou entre 195,15 e 294,69 μmols eq. trolox/g pólen apícola. Relativamente à atividade antimicrobiana quantificada pelo método da microdiluição em placa, verificou-se que o produto inibiu o crescimento de todos os microrganismos em estudo, sendo o efeito dependente do gênero. Candida albicans foi mais resistente e Staphylococcus epidermides mais sensível. Os resultados indicaram que o pólen apícola possui atividade biológica e o crescente interesse pelo produto enfatiza a necessidade de novas pesquisas para investigar as suas propriedades, agregando deste modo valor ao produto.

Atualmente os consumidores cada vez mais formados e informados exigem produtos de qualidade, tomando-se imperioso o estabelecimento de padrões de identidade c qualidade para os produtos alimentares, nomeadamente o pólen apícola. Como nos demais alimentos ricos em proteínas, o pólen pode perder o valor nutricional rapidamente se manipulado ou armazenado incorretamente. Adicionalmente alguns países tais como Brasil, Espanha, Suíça, Argentina e França reconhecem legalmente o pólen como um complemento alimentar e apresentam padrões de identidade e qualidade, bem como os limites para os vários parâmetros analisados.
