Abstract(s)
The present study brings forward a simulation-based study of the production process of a Portuguese company that produces a wide range of bread. The main objective of this study was to analyse the different production processes of the company, and to propose further improvements to these, through the use of discrete event simulation. A relevant set of data was collected and four productive processes were chosen to be modelled using the Simulation Modelling based on Intelligent Objects software (Simio). The analysis of the developed models identi ed the need for improvements and di erent scenarios were created to this purpose. Among the obtained results, the creation of di erent mixed production scenarios allowed the maximisation of the production level
while maintaining the current existing resources. The results of this work can be implemented in the company to increase production level without increasing costs since they do not involve the purchase of new equipment. In conclusion, this study highlights the ability of the simulation technique to analyse manufacturing processes throughout the creation of di erent scenarios providing insights on the production process optimising companies' productive performance.
