Gray sugars were evaluated in samples submitted to different storage periods (0, 4 and 8 days) at 4 ºC. The irradiations were performed in a 60Co experimental equipment. Changes in sugars were determined by analyzing the results obtained by high performance liquid chromatography coupled to refraction index detection (HPLC-RI) through a 2-way analysis of variance and a linear discriminant analysis. Mannitol was by far the most abundant sugar in the analyzed samples.
