Abstract(s)
A rotulagem de produtos alimentares é uma das formas mais importantes para a
garantia da qualidade e segurança alimentar. Além disso caracteriza-se como um dos
primeiros meios de contacto entre os consumidores e os produtos alimentares e uma das
principais fontes de informações para o consumidor.
Este trabalho consiste num estudo sobre a rotulagem de chouriças de carne de
porco na perceção da qualidade e opção de compra pelos consumidores no concelho de
Bragança, Portugal. Os dados foram recolhidos através de um questionário aplicado a 234
consumidores, sendo 71 por entrevista presencial e 163 por um questionário
disponibilizado na internet. As questões colocadas estiveram relacionadas com o tipo
(chouriças tradicionais, correntes, extras, IG e IGP), a qualidade, os hábitos de compra e
consumo de chouriças de carne de porco. Como principais conclusões verificamos que:
70,1% dizem ler os rótulos das chouriças; 44,9% acham as chouriças tradicionais de
melhor qualidade e; 48,7% consomem as chouriças 1 a 3 vezes por mês.
Em suma, este estudo permite conhecer os tipos de chouriças de carne de porco
comercializadas, os conhecimentos relativos a rotulagem e qualidade das chouriças e, as
preferências e os hábitos de consumo das chouriças de carne de porco por parte dos
consumidores do concelho de Bragança.
The labeling of food products is one of the most important ways to guarantee quality and food safety. It is also characterized as one of the first means of contact between consumers and food products and one of the main sources of consumer information. This work consists of a study on the labeling of pork sausages in the perception of the quality and purchase option by the consumers in the county of Bragança, Portugal. The data were collected through a questionnaire applied to 234 consumers, of which 71 were by face-to-face interview and 163 by a questionnaire made available on the internet. The questions raised were related to the type (traditional sausages, currents, extras, IG and IGP) and quality, the buying and consumption habits of pork sausages. As main conclusions we verified that: 70,1% say to read the labels of the chorizo; 44,9% find the traditional sausage of better quality and; 48,7% consume chorizo 1 to 3 times per month. In short, this study provides an insight into the types of pork sausages sold, knowledge about the labeling and quality of sausages and consumption habits of pork sausages by consumers in the county of Bragança.
