Abstract(s)
Este trabalho teve como principal objetivo caracterizar a fileira da mandioca, passando pela produção e transformação tradicional da raiz em farinha, de forma a propor novas formas mais atualizadas e modernas na cadeia semi-industrial da produção da farinha e derivados. Além dos aspetos de produção e transformação, foi também analisada a sua comercialização em S. Tomé, de forma a valorizar este produto, partindo do pressuposto de que o desempenho e a competitividade de uma cadeia produtiva dependem, também, das relações existentes entre os seus segmentos. Nessa perspetiva, estudos como este podem contribuir para um melhor entendimento da cadeia produtiva da farinha de mandioca, e melhorar as políticas dos órgãos públicos para este setor produtivo. Em termos metodológicos aplicaram-se análises de fileira e de gestão, além de se ter realizado um estudo de casos, recorrendo a entrevistas, de modo a identificar o funcionamento e a organização da cadeia produtiva e da transformação da farinha de mandioca, envolvendo duas unidades de transformação (Buguê e Margarida Manuel). Por fim, após a realização deste trabalho, concluiu-se que existe potencial produtivo de mandioca em S. Tomé e Príncipe. Contudo, o sistema utilizado para o processamento da farinha deve ser melhorado a todos os níveis.
The aim of this study was to characterize the supply chain of cassava, from its production and transformation into flour, in order to propose new, updated and more modern forms for the semi-industrial chain of production of cassava flour and derivatives. Besides cassava production and processing, it was also analyzed its marketing in São Tomé, in order to valorize this product, assuming that the performance and competitiveness of a supply chain also depend on the relationship between its segments. In this perspective, studies such as this, can contribute to a better understanding of the production chain of cassava flour, and improve the public bodies policies to be applied to this productive sector. In methodological terms, the supply chain of cassava was studied, as well as two case studies involving two processing units (Buguê and Margarida Manuel), by applying interviews, in order to identify the way of function and organization of the supply chain, as well as the management of processing units of cassava flour. Finally, after performing this study it was concluded that there is potential for production of cassava in S. Tomé and Príncipe. However, the system used for flour processing should be improved at all levels.
